Ingredients:

– Chipotle Peppers (1 can)
– Garlic (6 cloves)
– Cumin (2 tbsp)
– Oregano (1 ½ tbsp)
– Ancho Chili Powder (1 ½ tbsp)
– Olive Oil (¼ cup)
– Salt (tt)
– Pepper (tt)

– Long Grain Rice (3 cups)
– Chicken Bouillon Powder (2 tbsp)
– Lime Juice (2-3 Limes)
– Cilantro (1 Bushel)

– Corn (1 Can)
– Red Onion (½)
– Cilantro (½ Bushel)

– Cotija (tt)

This made 8 small lunch servings.
