Mini dutch oven campfire cooking: cowboy beans, blueberry dutch baby, and roasted pumpkin pie

I’m still a pieiron person — all the way — but it’s fun to switch things up once in a while. Now that’s it’s finally cool enough for campfire, I can try out the little dutch oven I got at Daiso! We’re making frijoles charros, blueberry dutch baby, and a pumpkin pie of sorts IN the pumpkin!

Dutch Baby for One (or Two)
1/4 c milk
2 eggs
1/4 tsp vanilla
1/3 c flour
dash of salt
lemon zest (juice on the berries, if you would like)
1/4c butter
berries

If you plan to use it in less than 24 hours, you can mix it all ahead of time. Otherwise, mix the wet ingredients together, and add the flour the morning of.

BEANS
– a 4:1 water:beans ratio would be much faster than 1:1
