How To Make S’mores Camping Brownies

Traditional smore camping sandwiches are wonderful but we
always like jazzing things up a bit.

So, we came up with some awesome smores variations that are A-M-A-Z-I-N-G!

That was so fun we decided to try making these classic camping dessert recipes into an easy and indulgent brownie … and we’re happy we did!

You are going to start this recipe using a boxed brownie mix to help do the measuring of the dry ingredients for you … that’s one way to make easy camping meals!

Just make sure you read the package so you don’t forget to pack the ingredients you mix in later … typically it will be water, vegetable oil and eggs.


Step 1. Prepare your cooking equipment and fuel.

If you are making this as one of our campfire recipes, you’ll need to get your fire going in order to pull some coals out of the fire for baking … you can also use charcoal briquettes which is what I prefer for baking because the briquettes are similar in size and they provide a more uniform heat.

If you want to use your Dutch oven with propane, you can also make these camping smore brownies as one of our camp stove recipes so get your stove ready for cooking on a level surface along with your Dutch oven dome and heat diffuser plate.


Step 2. Preheat your Dutch oven.

I like brownies that are thick but not too thick so I use a 10-inch Dutch oven for this recipe.

You need to pre-heat the oven to 350 F degrees which will require 21 total coals = 14 top / 7 bottom.

Camp Cooking Tip: If you want a thicker brownie, you can use a smaller oven. If you want to use a larger oven but don’t want your brownies to turn out like a thin potato chip (LOL), then you’ll need to place a smaller pan inside the oven for baking. Either way, don’t forget to adjust the amount of coals you need by using our coal chart.


Step 3. Mix the toppings.

You will need to mix the marshmallows and graham
cracker pieces
in a bowl and set it aside for later.


Step 4. Prepare the batter.

As per the package directions, you just need to combine the brownie mix with the liquids … each mix is different but they usually call for water, vegetable oil and eggs.

Now stir in the pecans.


Step 5. Line the Dutch oven.

Place a parchment paper liner in your pre-heated Dutch oven
BUT be careful not to burn yourself!

I like using Dutch oven liners so I can easily lift baked
goods out of the oven to let them cool.

Camp Cooking Tip:
If you don’t want to use a parchment paper liner you can use a foil liner or
just bake the brownies directly in the Dutch oven but make sure you coat the
bottom and sides of the oven with cooking spray before you spoon in the batter.


Step 6. Add the batter to the oven.

Now it is time to put the brownie mixture … WITHOUT the toppings … into the oven.


Step 7. Par-bake the batter.

You are going to par-bake the brownies now.

Add the Dutch oven lid with the proper amount of coals on
top and bake about 15 minutes.

Camp Cooking Tip: When you are making Dutch oven baked goods, be sure to turn your oven during the cooking process to ensure even baking … every 10 – 15 minutes, turn the lid and the oven (in opposite directions) about 1/4 turn throughout the entire baking time.


Step 8. Add the toppings and continue baking your smores camping brownies.

Now comes the smores part!

Uncover the Dutch oven and sprinkle the marshmallow and graham cracker mixture over the top of the partially baked brownie mixture.

Replace the lid on the oven and continue baking another
15-20 minutes until the brownies are done.

You are looking for an inserted toothpick or knife to come out clean and the marshmallows toasted to a nice golden-brown color … just like when you roast them over a campfire!


Step 9. Cool and serve.

The best part about baking with Dutch oven liners is having
the ability to lift the food out of the oven so it quits baking and can cool.

Be careful … the oven is hot!

Using the edges of the parchment paper as handles, lift the brownies out of the oven and place them away from the heat so they cool slightly before you slice and serve them while they are still warm.

Ingredients

  • 18 oz boxed brownie mix prepared according to package directions
  • 1/2 cup chopped pecans
  • 6 large rectangular sheets graham crackers, broken into bite-sized pieces
  • 2 cups mini marshmallows

Instructions

  1. Pre-heat 10” Dutch oven to 350 degrees (21 total coals = 14 top / 7 bottom).
  2. In a bowl, mix the marshmallows and graham cracker pieces.
  3. In a separate medium sized bowl, prepare brownie mix according to package directions (you will usually need to mix in water, vegetable oil and eggs) and then stir in the pecans.
  4. Line the Dutch oven with a parchment paper liner … being careful not to burn yourself. Camp Cooking Tip: If you don’t want to use a parchment paper liner you can use a foil liner or just bake the brownies directly in the Dutch oven but make sure you coat the bottom and sides of the oven with cooking spray before you spoon in the batter.
  5. Pour the brownie mixture into the pre-heated Dutch oven lined with parchment paper, cover and bake about 15 minutes … you are par-baking the brownies here, not fully cooking them.
  6. Now, remove the lid and sprinkle the marshmallow and graham cracker mixture over the top of the par-baked brownies, re-cover the Dutch oven and continue baking another 15-20 minutes until the brownies are done and an inserted toothpick or knife comes out clean and the marshmallows are toasted.
  7. Lift the brownies out of the Dutch oven using the parchment paper exposed edges as handles … don’t burn yourself because the oven is still very hot.
  8. Cool the brownies slightly and serve warm.
