Cooking in the Mountains of south east Ireland, I cook outside my Volkswagon T5 campervan using a cast iron griddle. I use locally sourced Comeragh Mountain Lamb, which is farmed free range on the mountains, feeding on wild grasses and herbs. Louis my dog helps by keeping a watchful eye on the process. Its not the easiest method of cooking, I could easily made these in the van but I enjoy the process of outdoor cooking.
Lamb Kebabs
Ingredients (makes 2)
300g Minced Lamb
1/2 tsp ground cumin
1/2 tsp garam masala
1tsp paprica
1 chopped chilli
chopped cloves garlic
bunch of corriander
salt and pepper
Yoghurt Dressing
1 tbls greek yoghurt
chopped mint
1 tbls water
finish with salad and fresh lime juice
