Campfire Cooking – Dutch Oven BBQ Chicken and Potatoes

Campfire , Is anything better? This time I cook BBQ and Potatoes. This simple recipe has only 5 ingredients and is easy to make.
I love outdoors, the smell of the food mixed in with the smells of the campfire, Mmmm. All while being surrounded by nature , It can be so relaxing.

The BBQ and Potatoes Recipe will be below, I am giving you the recipe how I found it, not as I prepared it. The original recipe called for 1lb of better, yep, you read that right, 1 pound of butter.
That seemed like a LOT of butter to me and after reading some of the reviews I decided to leave the butter out all together.
I hope you give this recipe a try the next time you go camping or just want to cook outside. I guess if you really wanted to you could cook this dish in your oven if you wanted. ENJOY!

BBQ and Potatoes Recipe
Ingredients:
3-4 large chicken breasts
1 package of bacon
5 small potatoes, diced into bite size pieces – I felt this was not enough for 4 people, we used 4lb but I think 3lb would have been better
1 large onion, chopped
1 lb butter, optional – Optional – I did not use any butter
1 bottle of your favorite BBQ sauce
26 coals

Instructions
1. Make sure your coals are burning nicely. Place dutch oven on top and put bacon in dutch oven.
2. Cook bacon until cooked. Drain most of the excess grease (you want to keep probably 1/4 cup in the dutch oven)
3. Add onions, potatoes, chicken breasts, onion, butter, and BBQ sauce into the dutch oven.
4. Cover with lid and make sure there are 14 coals underneath the the dutch oven and 12 on top.
5. Cook about 40-50 minutes, or until the chicken is done. – I cooked it for an hour giving it a stir about every 15 – 20 minutes.”
