In this video, I seize a rare opportunity to head out to the woods with my son Tom. We find a nice quiet spot by the river and prepare a fire so that we can cook up a bit of lunch. Spit roast leg of lamb is on the menu, accompanied by a delicious wild mint sauce (ketchup for the teenager) and mint tea. Lush!
It was a good opportunity to use my new campfire spit roast set from Trevor at TJM Metalworks. An ingenious bit of adjustable kit that holds the meat perfectly for a juicy campfire roast. Mint Sauce Recipe
1 handful finely chopped fresh mint
2 tbsp malt vinegar
2 tsp white sugar
Salt to taste
Chop the mint
Add the rest
Mix
Enjoy.
