  • 3 slices thick bacon, fried and chopped or crumbled
  • 2 tablespoons mayonnaise
  • 1/4 cup chopped lettuce or fresh spinach
  • 6 grape tomatoes, quartered
  • 1 wheat tortilla (soft taco size)

Instructions

  1. Fry the bacon till it is crispy, drain it on paper towels then chop or crumble it into bite sized pieces.
  2. In a small bowl combine the bacon, mayonnaise, lettuce and tomatoes, toss to coat evenly.
  3. Lay tortilla on a flat surface and pile the mixture in the center.
  4. Roll the tortilla to create a hand-held yummy wrap. (Note: This recipe makes 1 wrap so scale up to make as many servings as necessary.)
