The burns are temporary. The banku is forever.
Cooked banku and Ga style okro stew over an open wood fire in a Swedish forest. Standing that close to the fire for that long left my legs in a state, but one bowl of this and I would do it again tomorrow.
Banku is a fermented corn and cassava dough, stirred over heat until it turns smooth and stretchy. Doing it on a wood fire instead of a coal pot means managing the flame as much as the dough, and there is no way to do it from a safe distance.
