Authentic Indonesian Klepon Recipe
Soft, chewy pandan rice balls filled with molten palm sugar and coated in freshly grated coconut.
Ingredients
For the Dough
250 g glutinous rice flour
180 ml warm pandan juice (or warm water mixed with pandan extract)
1/4 tsp salt
For the Filling
100 g palm sugar (gula aren), cut into small cubes
For the Coconut Coating
150 g freshly grated coconut
1/4 tsp salt
2 pandan leaves, tied into a knot
Instructions
1. Prepare the Coconut
Mix the grated coconut with salt and pandan leaves.
Steam for 10–15 minutes until fragrant.
Remove the pandan leaves and set the coconut aside.
2. Make the Dough
In a large bowl, combine the glutinous rice flour and salt.
Gradually pour in the warm pandan juice while mixing.
Knead until the dough becomes smooth, soft, and easy to shape. If the dough is too dry, add a little warm water.
3. Fill the Klepon
Divide the dough into small balls, about 25 g each.
Flatten each ball with your fingers.
Place one cube of palm sugar in the center.
Carefully seal the dough and roll it into a smooth ball.
4. Cook the Klepon
Bring a large pot of water to a gentle boil.
Carefully drop the Klepon into the boiling water.
Cook for 5–7 minutes, or until the balls float to the surface.
Let them cook for another 2 minutes after floating to ensure they are fully cooked.
5. Coat with Coconut
Remove the cooked Klepon using a slotted spoon.
While still warm, roll each ball in the steamed grated coconut until evenly coated.
6. Serve
Arrange the Klepon on a banana leaf or serving plate.
Enjoy them warm for the best experience, as the melted palm sugar will burst with every bite.
Tips
Use fresh palm sugar for a rich caramel flavor.
Do not overfill the dough to prevent leaking during boiling.
Keep the dough covered with a damp cloth while shaping to prevent it from drying out.
Klepon is best enjoyed fresh on the same day it is made.
