1 tablespoon (15 g) salted butter
1 lb beef chuck roast, cubed into 1 1/2 inch squares
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small onion, sliced
1 large russet potato, peeled and 2 inch turn-cut
1 large carrot, peeled and 2 inch turn-cut
1/4 cup 60ml cabernet red wine
1 beef consomme (bouillon cube)
2/3 cup (150 ml) demi glace
2 tablespoons (30 ml) ketchup
1. Heat a large sized pot on medium-high heat, then add butter. Once melted, add beef chuck roast then season with salt and pepper.
2. Let the beef cook until browned on all sides, around 8 minutes. Then add onions, potatoes and carrots.
3. Add the red wine and cook until reduced to half, around 2 minutes, to burn off the alcohol.
4. Add water to cover the beef 75% of the way, then add and dissolve the consommé by stirring.
5. Bring to a boil, then reduce the heat to low to achieve a slow simmer. Cover the pot with a lid and cook until beef is tender, around 1 1/2 hours, stirring occasionally.
6. Once beef has softened, add demi glace (highly recommend going to your local butcher to see if they have it is better quality than in stores), and ketchup. Stir to combine, season to taste, and serve immediately with steamed rice like the anime.
