Day 23 of 30: Gluten-Free, Whole Food Recipes

DUTCH OVEN BAKED OATMEAL

Ingredients:
* 2 cups gluten-free oats
* 2 cups milk (or dairy free alternative)
* 1/4 cup honey or maple syrup
* 2 eggs
* 1 tsp vanilla extract
* 1-2 tsp cinnamon
* 1/2 cup berries or apples (optional)

Instructions:
1. Mix all ingredients in Dutch oven.
2. Cover, place coals on lid, and cook over medium coals for 20-25 minutes, stirring occasionally.
3. Serve warm with extra fruit on top.
**NOTE: Be careful to not let it burn on the bottom. It’s hard to clean burned on oatmeal from a Dutch oven. (Don’t ask me how I know. 😜) Keeping it above the fire with more coals on top than underneath works best.

We have gluten allergies, so every recipe will be gluten-free. They will be made with whole foods and no processed junk.
