Campfire Cooking – Pie Iron Quesadillas

This is the first of several videos we recorded recently while camping for a week at Turquoise Lake. The quesadillas are definitely our favorite non-dessert that we have made in the pie irons so far.
If you don’t own a yet, be sure to buy the cast-iron brand and not the cheap aluminum ones that are sold at discount stores.

Ingredients for 3 quesadillas:
Meat – 1.5 pounds chicken (or steak). To simplify the process, we might use pre-cooked / pre-diced chicken next time. You could also go for a vegetarian meal and load up on veggies and skip the meat.
Veggies – We found a package of pre-cut onions & peppers at the local and diced them. Leftover veggies went into omelets and pizzas later on the trip. Since the camp stove was set up, we cheated and finished cooking the veggies on the stove. Might try cooking first in the next time.
Tortillas – Soft Taco/Fajita size is a little big for the square . If using the round , we would have been able to use the street taco sized tortillas.
Shredded Cheese – We didn’t use enough cheese in the first 2 quesadillas. Melted cheese helps hold the contents of the quesadilla together.
Use spray butter or non-stick spray on the between uses.
