Today we show you one of our favorite camping meals. Whole chicken in the cast iron Dutch oven.

Jen’s (Not so famous) Famous Dutch Oven Whole Chicken Recipe:
4-5 large carrots, unpeeled, chopped into 1″ pieces
4-5 stalks of celery, chopped until 1″ pieces
8-10 gold Yukon potatoes (or whatever potato you want) quartered
1 large yellow onion, sliced into 6 chunks, separated
Cover the bottom of the Dutch Oven with olive oil. Brush the oil around in the bottom and up the sides to coat evenly.
Put all veggies into the bottom of the Dutch Oven, mix.
Using about 2-3 tsp. of each, cover veggies with: olive oil, salt, pepper, and garlic herb grilling seasoning.
Clean out and rinse the whole chicken.
Season the chicken using 1-2 tsp. of each: olive oil, salt, pepper, and garlic and herb grilling seasoning.
Place the whole chicken, breast side down on top of the veggies. This helps keep the white meat moist while the dark meat cooks completely.
Pour roughly 3 cups of chicken broth in the bottom of the Dutch Over coating the veggies and chicken. Put a little additional garlic herb seasoning on top of the chicken.
Cover and cook over briquettes. Place approximately 20 – 25 briquette’s on top of the Dutch Oven. Cook for 35 – 45 minutes, until chicken is cooked through (165 degrees F).
Remove the Dutch Oven from the fire. Remove the lid of the Dutch Oven and carefully put the briquette’s back into the fire pit. Allow the Dutch Oven to cool for about 10 minutes before removing chicken and veggies.
Serve and Enjoy!
