EASY Rocket Stove Breakfast Burrito! Peaceful morning, Campfire Cooking – No Talking!
Recipe for 2 burritos:
1 Rainbow Runner fish fillet (thinly sliced, medium diced)
2 flour tortillas
2 yukon gold potatoes (large grated)
1/2 block cheddar cheese (large grated)
1/4 yellow onion (finely chopped)
1/3 jalapeno pepper (small diced)
2 large eggs (scrambled)
3 piquante peppers (finely chopped)
Green ends of 2 scallions (finely chopped)
1 half avocado (medium diced)
1 Tbsp fresh cilantro
2 Tbsp olive oil (to line the skillet)
Seasoning:
On the Rocks seasoning by PS Seasoning (see below for discount code!)
Salt & Pepper to taste
Sauce:
equal portions sour cream and salsa, mixed
Instructions:
Cook shredded potatoes and onions in skillet with 1 Tbsp olive oil until golden brown or crispy (your choice). Season with salt and pepper to taste. Remove and keep warm.
Place fish in skillet with 1 Tbsp olive oil. Season with PS Seasoning, salt and pepper to taste. Stir constantly. Remove from heat in 1 minute; keep warm.
Cook eggs in skillet to desired consistency. Remove and keep warm.
Assemble burrito. Add eggs, potatoes and onions, fish, jalapeno, scallions, peppers, cilantro. Tight roll.
Once assembled, wrap in foil. Heat in skillet for 5 min, turning frequently.
Top or dip in sauce.
