Campfire Cooking. Grilled Salmon with Potatoes. Cast Iron Baking.

In this video, I am finally back out in the woods with Maggie, my old faithful Newfoundland.
We are doing a bit of cooking, so after collecting and processing some firewood, I set about preparing our feast.

I begin by preparing the potatoes, sliced and layered with onion and smoked Dorset Halloumi, dressed with oil and seasoned with wild garlic salt. The potatoes are then cooked in my cast iron potato cooker – working a bit like a dutch oven, it cooks spuds to perfection.

The salmon is grilled simply on my campfire grill, skin side down, then turned to finish towards the end of cooking and smothered in a delicious Japanese inspired Mausu paste.
